Prepare the Tzatziki Sauce:
In a medium bowl, mix together the Greek yogurt, diced cucumber, red onion, fresh dill, lemon juice, olive oil, minced garlic, salt, and pepper until well combined. -
Combine shredded chicken with tzatziki sauce and mix until chicken is evenly covered.
-
Chill:
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.Serve:Arrange the lettuce leaves or wraps on a serving plate. Spoon the tzatziki chicken salad onto the leaves or wraps.Garnish:Optionally, garnish with extra dill or a squeeze of lemon before serving.
Notes:
While you can use canned chicken, this is a great way to use chilled chickens found in the local deli case or left overs from your own roasted or baked chicken.
While we don't usually recommend store bought chickens if you haven't done your own raising they can be a great source of carcasses for making broth for canning and this is a great use for the meat.
