    greek yogurt
  • 1/2 c
    cucumber, shredded or diced
  • 1/2 c
    red onion, thin sliced or diced
  • 3 Tbs
    fesh dill chopped
  • 1 1/2 Tbs
    lemon juice
  • 1 Tbs
    fresh mint
  • 1 Tbs
    olive oil
  • 1 clove
    garlic
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper

Step by Step

    In a medium bowl, mix together the Greek yogurt, diced cucumber, red onion, fresh dill, lemon juice, olive oil, minced garlic, salt, and pepper until well combined.

Notes:

While you can use canned chicken, this is a great way to use chilled chickens found in the local deli case or left overs from your own roasted or baked chicken.

While we don't usually recommend store bought chickens if you haven't done your own raising they can be a great source of carcasses for making broth for canning and this is a great use for the meat.
