  • 2 c
    self raising cornmeail
  • 2 c or 1 can
    creamed corn
  • 1 c
    buttermilk
  • 1 c
    grated cheddar cheese (or sub pepper jack for spicy goodness)
  • 1/2 c
    corn oil
  • 2
    eggs
  • 1
    onion
  • To taste
    jalepenos

Step by Step

  1. Preheat oven to 400.

  2. Mix all ingredients and pour into a square baking dish.

    Bake 35-40 mins until brown on top. 

Notes:

You can spice this recipe up a few ways... sprinkle chili powder on top before serving, Mix or switch pepperjack for shredded cheddar.

To make this really special use either freshly made or home canned cream style corn.
