Ingredients - Serves

  • 1 C (approx 1 large cobb)
    steamed corn kernels
  • 5 oz
    diced avocado
  • 1 1/2 c (3 small)
    diced cucumber
  • 1 c
    cherry tomatoes, halved
  • 2 tbs
    extra virgin olive oil
  • 2 tbs (1 medium lemon)
    fresh lemon juice
  • 1/4 tsp
    kosher salt
  • To taste
    black pepper

Step by Step

  1. Steam corn in steamer or microwave (or you can grill or boil) until tender, about 5 minutes.

    Let it cool then transfer to a large bowl.
