4bell peppers (any color)

2 c (approx 300g)shredded chicken

4slices crispy bacon, crumbled

½ cup (120 ml)

1 cup (100 g)mozzarella cheese, shredded

½ cup (50 g)cheddar cheese, shredded (you can sub colby jack or pepper jack)

½ teaspoon (2.5 g)garlic powder

To Tastesalt & pepper

Garnishchopped parsley

Preheat oven to 375°F (190°C).
Lightly grease a baking dish.

In a bowl, combine 2 cups shredded chicken, 4 slices crumbled bacon, ½ cup ranch dressing, 1 cup shredded mozzarella cheese, ½ cup shredded cheddar cheese, ½ teaspoon garlic powder, salt, and pepper.

Spoon the chicken mixture evenly into the halved and seeded bell peppers. Place the stuffed peppers in the prepared baking dish.

Bake for 25 minutes, or until the peppers are tender and the filling is bubbly.

Garnish with chopped fresh parsley if desired, and serve hot.
Notes:
This makes a great lunch or dinner entree and a great use for left over chicken. You can use canned chicken as well.
